BEST ANSWER: In the decaffeination process, the green coffee beans are immersed in water in order to extract the caffeine. The water contains the soluble components of the coffee beans, which holds the elements of the flavor, so that, during the extraction of the caffeine the beans maintain their original components.

To separate the caffeine from the water containing the soluble components, the water passes through a special filter which removes the caffeine. This results in "coffee solid soluble charged water" saturated with flavor components but free of caffeine, which is used again in the extraction process.

As a result of this process the coffee beans obtained are 99.9% caffeine free.

Adds to the flavor and presentation of my espresso shots.
Ordered your Mexican decaf. I use Mexican in my espresso blend to give my shots a bit of brightness and enhancing the crema.

I like it
I roast it to make 1/2 caffiene along with columbia huila. It roasts a bit faster so it is easy to go too dark. Good results though

Mexico Royal Select Decaf - first time purchase and roast
I use a heat gun for my roasting - I stir green beans in a stainless steel bowl with the heat gun about an inch from the beans. After 116 roasts, I've gotten where I can get very consistent roasts time after time. My wife and I like a medium roast (stop after the first crack and before the second gets going - usually).

We wanted to send some home roasted beans to our son in law's folks, they only drink decaf. I'd never purchased decaf beans for home roasting so I was surprised when I opened the package and found the beans "brown" in color.

I began the roast, of course I didn't get to see the green to tan color change but as the beans began roasting, they smelled great and roasted up just fine. Several hours later I did a course grind and pressed cups for tasting. Delicious! I hope Kazu's folks enjoy the coffee.

A really full bodied decaf bean
I don't usually roast decaf beans but my son switched to decaf so ordered the Mexico Royal Select. We both agreed that it is the most flavorful decaf bean we have had. I took them into the second crack to a medium dark roast which really brought out the flavor. It is worth trying a pound to see if it meets your expectations, too.
