For those who aren't using the higher-end mechanical roasters (with a built-in cooling cycle), we present the spray bottle cooling method.
By setting the spray tip to the finest setting and using distilled water, you can lightly spritz a small amount of water onto your "just out of the roaster" beans. The mist will instantly evaporate and rapidly cool the beans as you agitate them.
Be careful! By misting your beans when they are cooler than 212 degrees you will just end up dampening them! At this point, you can either agitate the coffee to cool further, or put a hair dryer on cool or a fan over the beans.
