Tasting Notes from Casey "The Coffee Guy": In aroma, I get sweet pipe tobacco with light woody/earthy hints. In flavor, you get that distinct "aged coffee" flavor, which is hard to describe, but similar to aged Sumatra or Monsooned Malabar coffee...pipe-tobacco-ish with woody, nutty and sometimes restrained earth notes. The acid in this coffee is beautiful; light and pristine. The body is SUPER full and really adds lots of support to the cup. In the aftertaste, I get a nice lingering sparkling character and sweetness from the acid. I really dig this coffee. Find similar coffees! Design your own blend with this coffee! Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At Full City, I get a sweet, slightly winey earthy cup with that distinct aged flavor (almost like brand new leather and ever-so-slight hint of pipe tobacco). Light acid and medium body - but this roast level is maybe a little weird for most people. Not enough roastiness to balance out the earth and aged character. You want to take it slightly darker. At a French Roast you get that nice spice element with hints of chocolate that makes the aged flavor very nice and more balanced. It also lessens the acid and makes the body a little thicker. Here you get the best out of this coffee. The idea Espresso roast for this coffee is also a French Roast: it really brings out the body, chocolate notes, and sweetness and takes the earth to the background (so it just supports the chocolate). The acid becomes a barely noticeably brightness that really livens up the cup and you get a SUPER thick crema. The aged flavor comes through nicely and really makes this coffee interesting. There is nice zip to the overall profile. You can use this coffee in small portions in blends as well to enhance the crema in your espresso. | |||||||||
