Indonesia Sulawesi Toraja In general, we look for deep resonant flavors in a Sulawesi. We want some sort of complexity, a light acid brightness to sparkle-up the cup, and no dirty off flavors in the cup - although a bit of earth (typical to Sulawesi's cousin - Sumatra) can be nice. Tasting Notes from The Coffee Guy: In aroma I get nice red-fruit notes with hints of earth. In flavor, the earth is drowned out by an explosion of bakers chocolate (nice texture!), overripe raspberry and strawberry fruit and a background of spice. The acidity is surprisingly tar and lively (medium) and the body is super full. What a find! Find similar coffees! Design your own blend with this coffee! Very full body; almost velvety! Nice raspberries in flavor with hints of apple - with the apple carrying through well into the aftertaste. This coffee is surprisingly fruited for a Sulawesi - surprisingly so! At a French Roast, the roast comes through a lot more and adds a heavy spice dimension to the cup and enhances the chocolate character. However, for me, although it does have a nice sweetness still, it loses a bit of the fruited complexity that makes the Full City so nice. I'd stick with a Fully City for this coffee. | |||||||||
