Not a boring cup, by any stretch of the imagination

The island of Sulawesi is a part of Indonesia - the same country of fantastic Sumatra, full bodied Java, and deep and complex Flores cups. Sulawesi was formerly called "Celebes" and many marketers still use this name when talking about their coffees. The most interesting cups come out of the Toraja region of Sulawesi, similar in the cup to excellent Sumatran coffees in their complexity - but with a bit more depth and vibrancy. The island of Sulawesi itself spindles off in 4 distinct finger-like stretches of the island and the Toraja region lies in the south-west "finger" of the island.

This name "Celebes" comes from the Dutch conquest times which they brought coffee growing to the region. This island itself is filled with dense jungle and native peoples - the name "Toraja" itself actually referring to a local native tribe. Both wet and dry processed coffees come from the region, with higher grades being wet-processed and lower grades dry processed for local consumption. But that's not to say that you can't find a good dry processed Sulawesi - good dry processed cups can often blow you away with their complexity. But you are more likely to get that "dirty" earthiness in dry processed coffees.

What does a good Sulawesi cup bring to the table?

So the question is, what can a good Sulawesi bring to the cup that other Indonesian coffees don't? Well, in a Sumatra cup, a bit of spicy earthiness is acceptable, if not desired. But a good Sulawesi cup should be devoid of this flavor, generally considered a taint in coffees outside of Sumatra. In addition, Sulawesi cups will have a bit more pungent complexity/richness and slightly less body than a good Sumatra (but still significant). Chocolate-like characteristics can be found in both.
