Indonesia Java Java coffee comes from the lower island of Indonesia and is cultivated at an altitude of about 4500 feet. The coffee is exclusively wet-processed and is known for its incredible body and rich, deep flavor. It is often blended with Yemen Mocca as the brighter and wilder notes of the Mocca bean are thought to compliment the big body of the Java quite well. Javas can oftentimes lack depth to the cup and its full body is what makes it special. You need to be careful with this coffee, as most lots can be exceptionally boring - or worse, have dirty off flavors (that are very present due to its lack of complexity). This coffee stood out because it is very clean with very nice body, and also has a nice edge of citrusy complexity buried in the flavor (not common in Javas). **Tip** Use this coffee to thicken up wildly complex (but thinner) Ethiopians and add a nice rich edge to the cup. Tasting Notes from Casey "The Coffee Guy": In aroma I get hints of citrus and herbal notes. In flavor, I get a very nice sweetness with hints of other fruits in the background. The flavor is almost in a candied tangerine dimension. I also get hints of pepper and lots of chocolate. The brightness is surprising - a medium acidity with a nice tart and zippy character; so nice!
