Sumatras are well known for having earthy, spicy notes. In general, Indonesian coffees can be pretty exotic but in a more earthen dimension, as opposed to Ethiopian coffees which are exotic in a more fruity dimension.
But within the Sumatra subset, there is a quite a variance of flavors. Some Sumatras have almost no acid while others have a nice lively acid. Some have distinct wet, rich earth notes. Some have a more musty characteristic to them. Any good Sumatra is going to have a bit of "funk" to it; that's what makes it good. It all boils down to whether it's a good or a bad funk. "Earthy" can easily become "dirty". But here is the real mysterious thing about Sumatras...no one can really come up with a good sounding description for the flavor you get out of a really good Sumatra. I guess the best way to describe them is a "pleasant moist mustiness", like a forest canopy would taste if you could put it all in a blender and pack it in a coffee. Tasting Notes from Casey "The Coffee Guy": In the aroma I pull nice vanilla notes with chocolate and restrained sweet earth notes. In flavor, I get pleasant and light earthy notes (very nice) mixed with pleasant bakers chocolate. What really makes this cup interesting though is the low key sweetness and (very light) fruit notes. There is a hint of banana in the cup which is quite unique for a Sumatra. There is a light brisk acid coupled with a medium body in this Sumatra; A perfect combination. I really like this coffee. Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: This coffee really opens up at the French Roast. The acid is light but with a nice sparkle and the body thickens up to a nice medium. Nice Sumatran chocolate flavors are present with a sweet fruit flavors with hints of marmalade (yes, marmalade!). There is a nice sweetness in the aftertaste which makes it a very nice finish, indeed. This is a great (and very clean) Sumatra and can take a dark roast well. | ||||||||||||||||||||
