From the island of New Guinea comes this balanced bean, full of richness and aroma. It is considered one of the most complete coffees out there. Papua New Guinea can be loosely described as Sumatra meets Costa Rican (or similar central American coffee.) It has a medium-to-heavy body with a few of the earthy notes of Sumatra mixed with the brighter acidity and complex aromatics of the Central Americans. As like Guatemalan, another complete coffee, Papua New Guinea will take the full spectrum of roasts, and they are all good.
This coffee comes from the Eastern Highlands of Papua New Guinea near the town of Kainantu and the mountains of Yonki Dome (2,286 m) and Elendora (2,804 m). Arokara is a cooperative of plantations that is managed by long time residents and community leaders who have been growing and processing coffee in Papua New Guinea for over 20 years. The plantations were initially set up by the state-run Rural Development Bank, and were returned in the 1990's to local clans and tribes who now own and manage them. They are at an altitude of approximately 1,600 meters above sea level. The clans grow their coffee without any chemical inputs and picks it by hand. It is fermented for 36 hours, washed with fresh water from the nearby Aru river, then sun dried for a period of 7-12 days. The cooperative employs workers from the local community for its processing and drying operations. Approximately 10,000 to 12,000 people from surrounding communities depend on the revenue generated from the cultivation, export, and processing of this coffee. A surprisingly bright acid (very nice!) with a full velvety body. This coffee is very clean with citrus, vanilla and a distinct sweetness - with the flavors fading cleanly and quickly after each sip. Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At a Full City roast this coffee is very nice - with strawberry and sweet chocolate notes coming through well. The acid is light and the body very full. The sweetness complements the full body very well making this coffee a crowd pleaser for sure - but not as complex as some of the more complicated Ethiopian coffees. Into the French Roast, the coffee still has a hint of the sweet strawberry but the chocolate and roasty flavors thicken and dominate the cup. The light acid becomes more noticeable and the body thins out just a little bit. We find that the Full City offers the most balanced and full flavors for this coffee. | ||||||||||||||||||||||
