Ethiopian Yirgacheffe, Organic Ethiopian coffees are incredibly diverse and distinct from one another. Sidamos are oftentimes wildly fruity and perfumey with incredible blueberry notes. The Yirgacheffe region lies inside of this Sidamo region, but you wouldn't know it...the coffees are so different! Occassionaly you will find a Sidamo that you would swear was a Yirgacheffe or visa-versa, but this is most likely because it was harvested right at the border between the two. But typically, you will get distinct black tea, apricot and citrus notes from a good Yirgacheffe. It will have a present acid, but not dominating like a Kenyan and a nice body, but not too full. In this mix of flavors, a certain degree of sweetness is important, otherwise the citrus flavors dominate and can lead to sour flavors in the cup. Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At a Full City Roast brewed as a drip cup, I get hints of apricot and papaya a nice tart citrus and a nice candy sweetness. Full body with light acidity/brightness; nice balance to the cup - everything carries through nicely. There are also hints of blueberry and vanilla in the background with a little bit of tea mixed in for complexity. Very nice. At a French Roast brewed as a drip cup, I get nice blueberries, sweet full body with light acidity. Lots of roast character and nice sweetness. It loses a bit of complexity at this roast level but is still pretty nice. At a Full City Roast brewed as an espresso, there is a bit of light vanilla, citrus and slight bitter lemon peel character in the shot. I get a bit of almond nuttiness and hints of blueberries...nice but maybe too much brightness for some. At a French Roast brewed as an espresso, I get lots of roasty and nutty fullness with a light/sweet acidity and brightness. There is a nice blueberry dimension with lots of chocolate (a function of the roast character) and a medium body...very nice finish. This roast level is my pick for an espresso. | |||||||||||
