Ethiopia offers some of the most incredibly complex coffees in the world. That is without a doubt (you will notice a disproportionate number of Ethiopian coffees on offer here - they are just so diverse and incredible and we snatch them up whenever we can).
This Sidamo is unique for a number of reasons. First off, it's certified organic which is always a plus. Next, the flavor is "knock your socks off" incredible. It has everything you want in a coffee. Incredible flavor and aroma. Perfect brightness. Full body. Incredible and complex flavor with a touch of sweetness. But here's the most fascinating thing about this coffee. It's a naturaly processed Sidamo. Natural processing is different from washed coffees (washed is the way that the majority of the world's specialty coffee is processed) in that the fruit is left on the coffee seed as it sets out on the patios to dry in the sun. This typically imparts wild and brooding fruit notes to the coffee in the final cup. Natural coffees are often very complex, sometimes overwhelmingly so to the detriment of the cup. So imagine our surprise when we found out that this coffee is a natural processed coffee. The brightness and classy flavor of the cup was more consistent with a washed coffee than anything else. But you get the incredible explosion of fruit (blueberries and raspberry in this case) that you would expect from a natural coffee. This coffee is well worth a try. In the aroma, I get rich raspberry and blueberry along with chocolate. Very clean and fresh. The acid is interesting in that it isn't intense: light+/medium- but it has a rich, bright lemon tanginess to it, lending excellent support of the bright berry flavors. The medium- body makes the coffee full and rich. In flavor I get blueberry, raspberry, with lemon hints which is full and light at the same time. All this with a rich sweetness in the background of the flavor and well into the aftertaste. Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: Roasted to Full City and beyond, this coffee has incredible aromatics with raspberry, cherry and blueberry. The body is light and the acid sweet and crisp lending a delicate nature to the cup. At Full City, the coffee has a distinct sweetness with blueberries and a lingering brightness on the tongue. A perfumey dimension fills the nasal cavity (wow!) and there is cinnamon in the finish. Roasted to Full City+ / French Roast, the coffee becomes crisper (as the acid subsides) - with fuller body and the chocolate notes becoming more prominent. The crispness compliments the sweetness very well and the perfumey dimension becomes much more prominent and deep. With this darker roast, a roasty bakers chocolate lingers on the tongue in the aftertaste. | ||||||||||||||||||||
