Ethiopian Sidamo This coffee is similar to the Ethiopian Yirgacheffe - with some subtle differences. Interestingly enough, Sidamo is a large coffee region in Ethiopia and Yirgacheffe is a smaller sub-region within that area, which explains the similarities. Sidamos are in and of themselves fascinating coffees - definite must try's as they bring greater understand of coffees from the wider area. They fall into two categories - washed and natural processed Sidamos. Natural Sidamos are typically very perfumey and dynamic with dynamic and bold fruit character (the fruit is left on the seed during the drying process and imparts a flavor). Washed coffees (which this is) can still be perfumey (this one is), but they have more of an emphasis of acidy bright notes - and are as a whole much cleaner and less distracting cups. Light+ acid and medium- body lend an excellent balance to the cup. In flavor, I am blown away with phenomenally rich berries and slight lemon. There is a slight citrus dimension hidden between the perfumey depth. The cup as a whole is sweet and delicate. This coffee is incredible. Find similar coffees! It's a perfect example of a bright and extremely clean raspberry edged Sidamo. At a Fully City roast, the acid is very present coupled with very bright raspberry fruit and a light body. As you venture into the French Roast, the acid is tamed a bit and comes more in line with the body (the body thickens up a little bit at this darker roast as well). But the real kicker is that this raspberry flavor really meshes well with the darker roasted coffee flavors and imparts a perfumey characteristic to the cup. Some chocolate flavors creep in there at this darker roast as well. This coffee is great because there aren't a hundred things going on in the cup to distract you - and the flavors that it does have give it a zen like simplicity and class. | |||||||||
