Ethiopian Yirgacheffe FT/O You need to be careful with Yirgacheffes. A truly special one is a rare find. They are a delicate coffee. So here's something to watch out for in Yirgacheffes. A good Yirg will have tea and apricot notes. Sometimes a little citrus in there. Now imagine that mixture. That alone could lead to a sour concoction. So what do you need to look for in addition to this? Full body helps. It allows room for the depth of flavors to expand on the palate. In addition: Sweetness. If there is no sweetness to the cup, you get can end up with a sour mix. Ideally you want a yirg that has all the complexity of a good Yirgacheffe with that sweetness and supporting body. Tasting Notes: The aroma has plenty of lemon and tangerine notes with hints of just enough spice to temper it - vanilla+others. The flavor follows, accentuating spice a bit more. The acidity is bright with this one - as all good Yirgacheffe tends to be. Med+ body helps to temper it, while a nice aftertaste is left. Find similar coffees! Design your own blend with this coffee! Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: This is a bright coffee, so you can feel free to roast a little darker with this one. I personally find that the best flavors come out in the City+ range. Roasts under that level will be for the brave only - that's the some strong stuff. Roast above for a slightly reduced brightness and fuller body - (also a bit less varietal character). | |||||
