Bolivia Cenaproc, Fair Trade / Organic Bolivian coffee can be hit or miss - but when it's good, it's great. As the coffee infrastructure in Bolivia develops, coffee's from the Bolivian highlands will get better and better. This is one of the gems of the season with nice complexity in both aroma and flavor and very full fruit notes. The most notable thing about it is the juicy characteristic in the cup, compliments of the lively acid and complex apple/cherry notes in flavor. The complexity of this coffee really surprised us...most of the Bolivians we've seen this season have been kind of boring - not the stuff we like to carry. Tasting Notes from The Coffee Guy: In aroma I get nice sweetness with raspberry notes - very full and round. In flavor, I get lemon notes with slight ripe fruit, blood orange, cherry cola (yeah, I know!), and an acidity that is almost more like a Kenyan (very nice!) than a Bolivian. As the cup cools, the sweetness comes out more and overal flavors become much more floral. Medium- acidity and medium body. Find similar coffees! Design your own blend with this coffee! Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At Full City, in flavor I get juicy blood orange with a slightly tart and bright acidity - very nice. There is a slight herbal dimension to the cup which lends nice fullness to the cup. The juiciness to the acidity is very nice...almost like biting into an orange. The citric notes carry through the aftertaste and the body is very full. At a French Roast there is a nice sweet brightness - not so much herbal anymore but the acid comes through really nicely with a restrained and sparkling brightness. Very full chocolate with a less complex cup, but also a less distracting cup...the super complex citric qualities are now much more tame and come through as just light fruit flavors that fade into smooth chocolate. Light acid and medium body...this is my pick for this coffee. As espresso, the Full City has a really nice crema followed by ripe fruit in aroma with a little bit of pineapple. Medium acid and full body; exotic ripe fruit in flavor with some green apple. Caramel and chocolate with a slight bit of nuttiness in there. The acidity is firm, but not too much...very complimentary. As espresso, the French Roast has tangerine in aroma with more nutty (walnuts) and chocolate flavors. Very full body and light+ acid with hints of blackberry. Very nice too. | |||||||||||
