Fair Trade Mexican Rama Santa Cruz


Mexican coffee can be a bit mild in many cases. It's always a challenge to find a nice lot and when we find one, we snap it up. And when we are out, we are out until the next time we find some.

So what's the story with Mexican coffees, anyway? Why is it so hard to find a good one?

Well you start off with a more mild coffee producing region to begin with - Central America. Centrals are typically more simplistic in character with a bright acid to compensate for it. In boring cups, it's just that - and the brightness is often the only redeeming quality.

But in better cups, you get a nice body which acts as a cushion for the flavors and a tangy brightness that adds liveliness and a degree of sweetness to the cup. These great qualities are all in support of the main course - the complexity in the cup. Look for fruit and spice. You'll never get the complexity of an Ethiopian, but that's not the point. Both are highly enjoyable!

Tasting Notes:
The aroma comes out mostly nutty - slight departure from the eventual flavor. The flavor brings in a surprising floral note with a slight mintiness in the background. Light honeyish sweetness - med acidity, med. body, dry finish.

Roasting Notes:
This is a great bean to take to a slightly darker roast. Chocolate and spice notes will enter the equation with the darker roasts and help the natural sweetness of the coffee.
