Colombian, Las Mujeres de Guayata Colombian coffees are rock solid and this cup is no exception. But this cup will stand out from probably any Colombian you've ever had. When I look for a good Colombian, I'm looking for a few things: good aroma with depth, good acid and great body. The problem is that you can get quite a range of Colombians, some being kind of flat and boring. This coffee is exceptional because it's got a lot going on. Check out the cupping notes below for a bit more about this in a bit more detail, but the low-key perfumey fruit edge to this cup is phenomenal. This coffee is produced by a co-op called "Las Mujeres de Gauyata", which means "The Women of Guayata" in Spanish - and these women have obviously taken great care of this coffee as it grew and was processed. Tasting Notes from The Coffee Guy: One of the fascinating things about this coffee is the aroma. It's unlike any Colombian you've ever smelled - it beats you over the head with this incredible low key and perfumey, ripe fruitiness. It's almost natural processed Sidamo-ish. For those who don't know what I mean, when a coffee is naturally processed, the fruit is left on the patios without being stripped and allowed to dry on the coffee bean. The fruit imparts these really interesting and deep perfumey and ripe-fruit notes to the coffee with Sidamos - and I get a hint of that in this coffee. The spiciness comes through nicely with a bit of cinnamon shining through. A get a nice low+/medium- smooth acid and a nice medium- body. The same flavor that was present in the aroma makes it into the cup...nice ripe fruit, perfumey, full, intoxicating. The fruit slowly fades out in the aftertaste. This coffee leaves those "boring" Colombians in the dust. What an awesome coffee! Find similar coffees! Design your own blend with this coffee! In the light-roast aroma, even before the first sip, I get citrus, cinnamon, mango and ripe fruit. Very nice. In flavor, it's got a nice lively acid, but not dominating or distracting with hints of citrus and apple and slight mango. Very nice body, sweet. Well into the second crack, that fruity complexity subsides and this cup transforms into the bolder, spicy coffee that you are used to. It does become a bit more balanced in the darker roast, but I find that you lose what is so special in this coffee. Don't go too far into the second crack, metering your desire for that roastiness with the fact that you are losing the fruit-notes with every extra snap into the second crack you go.
