Tasting Notes from Casey "The Coffee Guy": In aroma I get fruit fullness, a slight winey character with hints of smoke and spice. In flavor I get nutty notes, spice (hints of clove), light berries and chocolate with a touch of smoke as well. There is a tart, tight, piquant (did I just say piquant?) medium acid with a medium- body. Very nice finish - the flavors just fade away to nothing. Find similar coffees! Design your own blend with this coffee! Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At a Fully City, I get a fairly intense nuttiness (more characteristic of a Brazil than anything) with distinct citric notes and hints of berries. The acidity is maybe a bit too much - very high and tart. You need to take this coffee a bit darker. At a French Roast, the coffee really blossoms: cocoa notes, with nice nuttiness and hints of wood. Medium- acidity with a very pleasant sweetness. Very balanced and very integrated/complete. The flavors drop off immediately after a sip and everything is very clean. So nice! At a Full City roast in an espresso shot, I get a nice nutty roasted character with hints of smoke. There is a nice brightness/acidity, but not too much, with hints of fruit in the aftertaste. I get nice lime notes (a function of the acidity) with a lemon-grass edge and just a touch of coriander. The soft fruit and acidity just keep going in the aftertaste and this is VERY pleasant. You get a lot of bang with each sip and can savor it for 20 seconds after you set the shot down. In a French Roast, I get hints of blueberry in aroma with a nice nuttiness too. Although the body becomes thicker and almost silky, the dark roast notes add a bit of bitterness to the flavor. In light of this, you probably don't want to take it this dark. You best bet for an espresso roast will be just a bit darker than a Full City. That adds a bit more of "umph" to the chocolate notes, tames the acidity slightly and still gives you lots of complexity. | |||||||||||
