Guatemalan SHB Palo Alto Azul, Organic Guatemalan SHB's are grown at slightly higher altitudes than coffees of the HB classification. SHB stands for "strictly hard bean" and HB stands for "hard bean" (but you will rarely see a specialty coffee HB). The top of the line in Guatemala is the Antigua grade, but this doesn't mean that you can't get superb and oftentimes even better SHB coffees. The classification is assigned to the bean based on bean size, intensity of the acid/brightness and body...but the "catador" or taster grading the coffee isn't necessarily rating or classifying it based on complexity and overall "goodness" of the coffee. And who's to say that a high-acid coffee is the best anyway? When you don't want to pay the sometimes unwarranted price premium of an Antigua, go with an SHB. In flavor, the vanilla and sweet lemon carry through well with a light nutty edge and a full sweetness. Medium body and a medium- apple-like brightness. The sweetness and brightness lingers on the tongue in the aftertaste. Find similar coffees! Design your own blend with this coffee! Recommended Roast Level(s): * Run your mouse over the roast chart for more detail * Roasting Notes: At a Full City roast, there is a nice nutty edge with light acid and dominating chocolate notes with full fruit undertones. This coffee excels at a French Roast however. The overall profile becomes richer and fuller with nice spice notes with a deeper chocolaty edge. Very nice sweetness that is complemented by the super-full body. The nutty edge adds an interesting bit of depth to the cup. This is a really nice coffee. | |||||||||||
